Because it gives them a false sense of control.
Exactly, I do not believe in superstition at all, yet I will perform some superstitious acts because I prefer the sense of control, even though I know I am fooling myself.
I am afraid there is no avoiding the honest answer, which is because they are stupid and ignorant. There was some excuse for superstition in the pre-scientific past; we now know so much about how the world works that there is none.
Mostly what TheSheep said. Being taught from childhood keeps one from questioning, as well. This applies to both the formalized systems of superstition known as religion, and the sympathetic magic types such as knocking on wood or not crossing under a ladder.
