Australia is too far away and too hot, Russians are too unfriendly and I live in Germany, I like it when I have to go to the states for things but of the choices listed, I'll take Holland. Good food, good beer and a lot of interesting things to see.
Good food, seriously??? Where? - LOL, maybe compared to German sauerkraut & bratwurst, but I would not say culinary finesse is something my country can boost about. (Unless you are prepared to pay astronomical amounts of money).
I don't recall any specialties besides the great Dutch Cheeses, but in a majority of the restaurants where we ate the food was good. It has been quite a long time since we've been there so I couldn't tell you any restaurant names.

Christmas is absolutely gorgeous and fun. I really liked it there at Christmas.
