Students should learn how to use computers. The choice of OS is almost irrelevant, unless they are going to be in IT, in which case they will know which to specialize in. It is kind of like asking what kind of car students should learn to drive, front wheel drive cars or rear wheel drive cars? It doesn't make that much difference. To a mechanic or enthusiast it does, but not in how we learn.
I don't think your analogy holds up. There is a difference between operating systems and there is a difference between front wheel and back wheel drives. Ask anyone driving on ice. But, I do get your point. I am very much an end user, not a operating system wonk.
