A not-for-profit enterprise just means you plan on spending all the money you take in through donations. Many non-profits have been know to give large bonuses to their not-for-profit administrative officers.
the problem is I'm also interested to create products that can scale and potentially attract bigger investors, whereas a not-for-profit can attract donor grant. I want an org flexible enough to attract both.

yes, but mostly I'm interested in being able to raise capital to create a product that can scale.
