I love to cook. If I had the time I could write a bunch of casserole recipes. Most of them, after you've made the first one, are easy to throw together. You just need to keep in mind what fits with what.
If you like to make enough meals for the week, use a crock pot (slow cooker) and let it cook for a long time. Divide it up and put in freezer. Take it out of the freezer in the morning, put it in refrigerator and it will be thawed by evening. I enjoy cooking much more than eating it. Sheepie's site is very useful also...
Thanks for the recipes / links everyone! Our household gets pretty chaotic at times, with everyone in and out at different times so I wanted a few new ideas for my slow cooker. I'll enjoy trying out your suggestions.

Pulled pork BBQ. Let the pork simmer in the crock pot all day. Very little can go wrong with it.

Tuna Casserole
1 can Cream Mushroom Soup
1 can Tuna
2 cups macaroni/shell noodles
However much cheese you like...
Boil noodles.
Combine in casserole dish with tuna and soup.
Spread thin to thick layer of cheese on top.
Bake at 300 degrees F until cheese is melted and has formed melted crispy cheesy layer on top.
I like it, there is one for ham also, but it is harder to explain...
